Here’s a dish of the season but not really seen temperatures, I found it perfect! Bacon, red wine give great taste to the dish. All blends really well! Be careful to use a quality chicken to prevent the flesh falling off the bone. The chicken St-Sever (I received at the show of Belgian culinary blog) was so perfect!

  • 1 chicken cut into St-Sever
  • 200 g bacon
  • 1 onion
  • 4 tomatoes
  • 2 cloves garlic
  • 1 / 2 glass of red wine
  • 2 tablespoons vinegar
  • 1 tablespoon olive oil
  • 1 bay leaf
  • Parsley
  • Salt
  • Pepper
  • 600g mushrooms
  • Peel the onion and mince. Peel and chop the garlic.
  • Peel the tomatoes, cut into cubes.

Sauté onions 3 minutes. Add chicken and bacon. Mix well for 2 minutes. Deglaze with red wine. Stir in tomatoes, garlic, and bay leaf.

Simmer 1 hour over low heat.

20 min before the end of cooking, peel and slice the mushrooms. Fry in a pan for browned. Incorporate them into the chicken. Also add the vinegar.

Increase heat and reduce for about 5 minutes.
