Chocolate Mint Candies Cookies Recipe

These cookies are so good! Enjoy Some simple recipe Double Mint Magic with this Chocolate Mint Candies Cookies Recipe! These were by far my favorite cookie I made at Christmas. I probably ate half of them myself. They are really easy to make. I used 1/2 mint per cookie. After they came out of the oven, I put the 1/2 mint on each one and by the time I had finished putting a mint on the last one on the pan, the first one was melted enough to back through for the next step. Instead of trying to swirl it with a toothpick, I just flipped what was left of the mint over, since the edges were melted and the inside was still a bit solid and it came out with a swirled look.

Ingredients:

  • 3/4 cup butter
  • 1 1/2 cups brown sugar
  • 2 tablespoons water
  • 2 cups semisweet chocolate chips
  • 2 eggs
  • 2 1/2 cups all-purpose flour
  • 1 1/4 teaspoons baking soda
  • 1/2 teaspoon salt
  • 3 (4.5 ounce) packages chocolate covered thin mints

How to make Chocolate Mint Candies Cookies:

  • Take a saucepan and cook the sugar, butter and water over low to medium heat, stirring occasionally until melted.
  • Take it off the heat, add in the chocolate chips until melted and set aside to cool for 10 minutes.
  • You must not melt chocolate directly over the heat or it may burn.
  • Transfer the chocolate mixture into a large bowl, and add the eggs into it, whisking it all the while.
  • Make a batter with the flour, baking soda and salt, and stir into the chocolate mixture. Cover with an aluminum wrap and allow to cool in the refrigerator
  • Preheat oven to 175 degrees C. Grease the cookie sheets with vegetable oil. Roll cookie dough into walnut sized balls and place them on cookie sheets.
  • Bake for 8 to 10 minutes in the preheated oven, be careful not to overbake. When cookies come out of the oven, press one mint wafer onto the top of each cookie and let sit for 1 minute. When the mint is softened, swirl with the back of a spoon or toothpick to make a pattern with the green filling of the mint wafer. For smaller cookies, break mints in half.

Tips:
Using the two different mint sources increases the flavor complexity, but still allows for a consistent mint theme, which is nice. Plus, it’s also hard to get too much mint. One thing is sure, this Chocolate Mint Candies Cookies recipe will be a real crowd-pleaser, especially with a tall glass of cold milk nearby!
