How to Make Chinese Fried Walnuts

Integrate:

  •     5 pounds walnut halves and pieces
  •     1 pound 2 ounce sugar
  •     Vegetable oil
  •     Salt, as needed


Procedures:
Drop walnut into boiling water.Reheat to boiling, cook 1 minute. Rinse under running hot water; drain. Toss walnut in sugar. Deep fry 1 pound batch of walnuts in hot oil, at 350° for 5 minutes or until golden brown, stir often. With slotted spoon, place walnuts in coarse serve over bowl to drain. Sprinkle light with salt; toss lightly to keep walnuts from sticking together. Transfer to wax paper to cool. Store in sealed container.
Yield: Makes 20 cups.
