Sunrise Peach-Nut Caesar Salad

Dressing:

 

  •     1 egg white
  •     1 tsp. dry mustard
  •     2 Tbsp. water
  •     1 garlic clove, minced
  •     2 tbsp. non-fat yogurt
  •     1 tbsp. each; chopped fresh basil, parsley, chives
  •     1 tsp. red wine vinegar
  •     Juice of 1/2 lemon
  •     Dash of crushed red pepper
  •     Salt to Taste

Salad

  •     1 small head Romaine Lettuce, torn into bite sized pieces.
  •     1/3 cup walnuts, chopped
  •     2 ripe peaches medium sized, skinned and sliced
  •     2 tbsp. shredded parmesan cheese


Procedures:
Combine all dressing ingredients. Mix with walnuts and lettuce. Place peaches on top, fanned into a sunburst. Top with parmesan cheese. Per Serving (4.6 ounces), Calories 140, Protein 6.15 g, Cholesterol 2.65 mg, Total Fat 7.55 g, Saturated 1.18 g, Serves 4
