Sunrise Peach-Nut Caesar Salad

Dressing:
- 1 egg white
- 1 tsp. dry mustard
- 2 Tbsp. water
- 1 garlic clove, minced
- 2 tbsp. non-fat yogurt
- 1 tbsp. each; chopped fresh basil, parsley, chives
- 1 tsp. red wine vinegar
- Juice of 1/2 lemon
- Dash of crushed red pepper
- Salt to Taste
Salad
- 1 small head Romaine Lettuce, torn into bite sized pieces.
- 1/3 cup walnuts, chopped
- 2 ripe peaches medium sized, skinned and sliced
- 2 tbsp. shredded parmesan cheese
Procedures:
Combine all dressing ingredients. Mix with walnuts and lettuce. Place peaches on top, fanned into a sunburst. Top with parmesan cheese. Per Serving (4.6 ounces), Calories 140, Protein 6.15 g, Cholesterol 2.65 mg, Total Fat 7.55 g, Saturated 1.18 g, Serves 4
