A professional cook with over twenty years teaching experience, Lou was the principal teacher at ‘Cookery at the Grange’ and then went on to set up her own catering business after freelancing all over the world, including France, New Zealand and Australia. But her real passion is teaching, and her success has been founded on vibrant energy and ability to get you cooking fabulous food of which you are justifiably proud, while imparting a wealth of experience and knowledge. You will find that days disappear in a cloud of fun and laughter, and the end of the day comes around before you have even blinked.
Location
The residential cookery school is based at Middle Farm House in Somerset, in a beautiful 16th century thatched ‘Long House’. The Hutton family originally farmed here in the 18th century, and the house has just been superbly renovated by Lou and Roger Hutton, retaining much of its original character. The large farmhouse kitchen, with views over the gardens, provides a relaxed and informal atmosphere in which students can develop their new found cooking skills and confidence. The kitchen has been thoughtfully designed and equipped, and includes an Aga as well as all modern cooking appliances.
Foundation Cookery Course
During the four week Foundation cookery course, students start off with simple techniques, but move through a cleverly structured programmed which continually builds up more and more skills while creating increasingly advanced and imaginative menus.
Food of Course Cookery School Starting with methods and techniques such as chopping, baking, sautéing, steaming, you quickly move on, not only to more varied techniques, but also more sophisticated flavours. Presentation is also a skill that you will begin to master. A fish day, an Italian day, and a Thai day all add fun to the learning process, and will show you the huge variety of great tastes from different regions. You will visit local markets and suppliers to discover how to recognise quality and then choose the freshest seasonal ingredients.
Cooking on Yachts
Food of Course Cookery School they appreciate the special demands of the environment in which you work, the sometimes cramped and difficult conditions of cooking on board a yacht, where you are still expected to produce and deliver exceptional food. The Foundation Cookery Course will give you all the training you need to cook to the highest standard on board yachts and boats around the world.
